Trainee training with the boss:

Ben and Waly are our two chef trainees in their 2nd year of training. Through regular conversations by phone or whatsapp, we know that our employees would also much rather be there for our guests and, above all, cook for them. Today we are once again taking advantage of the enforced lockdown to give the two of them the opportunity to cook a classic regional dish on their own

We started at 8.00 a.m. with a shared espresso and the preparation of the shopping list. Barbara chauffeurs the two boys to the wholesale market in the Schlossanger bus and at 9.30 a.m., after shopping, production begins in the kitchen. We explain how important fresh cuisine and high-quality products are for our wellness hotel and gourmet restaurant in the Allgäu. Eager to learn, committed and highly motivated, the roulades are then prepared, the vegetables chopped and classic side dishes prepared. At 1 p.m. it's time to serve and enjoy together. The boys are already looking forward to the next workshop and we take on the difficult task of enjoying and judging.
